Olive oil, the green gold of Provence, so fragrant and tasty, reigns over this warm-hearted cuisine. It lights up the colourful procession of pumpkins, egg-plants, tomatoes and peppers across our plates.

When you add to this the herbs from the garrigue : thyme, sage, rosemary and a pinch of garlic, magically the accent of the South can be heard in your kitchen.

Now think of monkfish laced with garlic, of vegetables in anchovy sauce (anchoïade) or of grilled sardines : all this represents the generous tasty cuisine of the Mediterranean.

Did you know there are a thousand flavours in Provence ? Food lovers have always known how to prepare and produce simple dishes with savoury names : basil and vegetable soup (soupe au pistou), local beef stew (gardianne de taureau) or time-honoured ratatouille.

They just can’t be missed! Part and parcel of Provence,rich in colours and flavours, you will enjoy them enormously. The markets, where good humour, the riches of local agriculture and crafts meet, are festive places you share with the vendors and their colourful stall.

The Pastis from Marseilles
A veritable institution dear to Provençal hearts, associated with sunshine and lazy days, pastis also symbolises Provençal conviviality. This aniseed-based drink to which you add 5 volumes of cold water is the drink par excellence – a must for the people of Provence who sip it with great pleasure in the shade of a plane tree, after the market or when the pétanque game of bowls is over. There are some variations on this well-loved drink known as “Le Jaune” : mixed with barley sirop, it becomes a Mauresque”, green with mint, ‘Perroquet” (parrot), or tinted with red sirop, a ‘Tomato”.But don’t drink too much of it !
The Liqueur from Frigolet
The restorative powers of this liqueur comes from around 30 herbs, mostly gathered on the hills of the Montagnette. It is blended and distilled according to an ancient formula which is a closely guarded secret.
Produced in Chateaurenard by the Distillerie Inisan,it remains a pure Provençal tradition. It is used to make 2 sweetmeats : Lou Pantaï and the Chardon.
